Jose Manuel Dominguez farms a single 1.1-hectare plot near the Atlantic in the Val do Salnes, where vines planted in 1972 and 1986 dig into unusually hard, metamorphic-tinged bedrock beneath barely any topsoil. The result is a denser, more mineral, more concentrated take on Galicia's signature grape. Fermented with native yeasts and raised partly in old oak, unfined and unfiltered, it trades the usual tropical fruit for texture and a salt-licked cut.
