Tavel is the only appellation in the Rhône — and one of the few in France — devoted exclusively to rosé. Chateau d'Aqueria is one of the historic benchmark producers, working primarily with Grenache via maceration to make a rosé that's deeper in color and structure than the Provençal style. This is rosé for the table, not the pool: serious enough to handle real food, with the texture and savor of a light red. Drink it cold but not ice-cold to let the fruit unfold.
