The Story
Clement Lavallee left home at 15 to learn winemaking, apprenticed at Chateau Margaux and Chapoutier and even Australia, then came back north to start his own thing. This is the first bottling in his "Cuvee Ephemere" series, one-off, exploratory wines meant to capture a moment and a place. It's red Burgundy from Irancy, the cool, overlooked corner up near Chablis that's actually dedicated to Pinot Noir. Lavallee farms organically, ferments with wild yeast, and bottles unfiltered, so this is Pinot with real transparency and a bit of edge.
