Most Cremant du Jura is grown down in the broad valleys, where the land is generous and the wine is pleasant. Domaine Ligier is in Arbois, on the marl and clay slopes that give the Jura's most famous wines their savory backbone, and the family treats their sparkling wines with the same seriousness as their still ones. This is 100% Chardonnay made in the traditional method and aged 12 to 18 months on the lees. Because it grows on clay and marl rather than chalk, it does not taste like a Champagne copy: it is broader in the shoulders, deeper in texture, and unmistakably salty in a way that says Arbois. A terroir wine that happens to have bubbles.
