Most Bourgogne rouge is a shrug. This one comes from 50-plus-year-old vines in Bons Batons, a Chambolle-Musigny lieu-dit that just happens to sit on the wrong side of an appellation line. Virgile Lignier farms organically, ferments with ambient yeast, and uses whole clusters when the fruit asks for it, treating this bottling with the same seriousness as his premier crus.
