Gian Paolo Isabella was a world-class Muay Thai fighter before he hung up the gloves to make wine outside Modena, and he brings the same discipline to the vines — organic farming, indigenous grapes, no shortcuts. Bi Fri is his white pét-nat: Sauvignon Blanc and the local Trebbiano Modenese, refermented in the bottle with a bit of must from the original press, undisgorged and unbothered. It's cloudy, bone-dry and genuinely thirst-making, the antithesis of the sweet industrial fizz this region got famous for. Pop it, pour it, don't overthink it.
