The Story
The Hermit Ram is the wildly idiosyncratic project of Theo Coles in North Canterbury, New Zealand, where he makes wine with almost zero inputs from organically and biodynamically farmed fruit. This Field Blend is a co-ferment of white and red grapes picked and fermented together, exactly as they grow in one of the region's oldest vineyards: Riesling, Chardonnay, Pinot Noir, Cabernet Sauvignon, and Gewurztraminer all in one. Six weeks on skins followed by amphora aging give it a cloudy, pale rose-amber hue and a delicate, crunchy character. Wild-fermented, unfined, unfiltered, with no added sulfur. A genuine one-of-a-kind.
